Ukrainian Easter Speciality

To everyone, I greet you with the Easter Sunday greeting

Christ is Risen!

and the response is

He is Risen Indeed!

 

I have recently received a request for a recipe that has been handed down in our family.
It is not for the those who have health issues with cholesterol.

It is called NATCHYNKA (an yeastless bread, cubed and made into a “dressing” for ribs)

the yeastless bread is called Palanytsia (Shroud)

Mix together

6 eggs, well beaten
1 cup warm water
1 tsp salt
2 tsp baking powder
4-4.5 cups flour

Roll out, place on oiled cookie sheet.
Bake at 350F for 30 minutes or until browned lightly.
Cool. Cut into 1 cm cubes and place in a large roaster that has been sprayed with PAM

Natchynka

..1/2 lb butter, melted cooled
..1 onion, chopped
..garlic to your liking
..salt & pepper

Saute butter, onion and garlic with salt and pepper till translucent. Pour over cubes. Cool.

Add the following separately to the cooled cubes

8 eggs, well beaten
Stir the eggs into the cubes.

3+ cups milk that has been heated. Pour over cubes. Stir. Place lid on roaster to “steam”.

Settle the cubes gently, pressing surface gently to make it even WITHOUT pushing down hard.

Bake in 350F oven for 30 minutes.

Cool.

Serve with beet relish, kobassa, ham.

Note: My family used to get the whole pork rib cage and stuff this dressing inside of it and bake / roast it. Today, I usually roast my ribs separately and pour the drippings over the baked dressing.
